Raw Milk Consumption
Scott Rankin, Department of Food Science The consumption of raw milk has been a controversial issue since pasteurization was first discovered and imposed. On one side, passionate devotees actively proclaim multiple health benefits from consuming raw milk in its most native form. On the other side, equal passion and certainty exist amongst those charged with ensuring a safe food supply in an era of well-characterized food-borne diseases. With many states legislatively placed on either side of this controversy, how will the "Dairy State" navigate through the issue of raw milk consumption?
