Willow Creek Farms
Travel to central Wisconsin to visit with Tony and Sue Renger, owners of Willow Creek Farms and producers of award-winning Berkshire pork, which is used by chefs like Tory Miller of L'Etoile and Stefano Viglietti of Trattoria Stefano.
We get a tour of their charcuterie facility, smokehouse and finally the pastures where the happy pigs roam free. Then, visit the Madison Club in Madison for the first SlowPig event put on by chef Dan Fox. SlowPig is a celebration of heritage pig and people responsible for pushing along the industry.
