Tony Mantuano / Spiaggia
In this episode we visit with Wisconsin native, award winning chef Tony Mantuano of Spiaggia in Chicago. Regarded internationally as an influential culinary force, Mantuano is the chef/partner at Spiaggia, the only four-star Italian restaurant in Chicago. Awarded the 2005 James Beard Foundation Award for Best Chef: Midwest, Mantuano worked in several Michelin-starred restaurants in Italy before opening Spiaggia in 1984 to critical acclaim. Chef Mantuano gives us a behind-the-scenes look at his restaurant and introduces us to his staff that prepares us a meal using products from Wisconsin. We also visit with Mantuano at his Kenosha restaurant Mangia as he hosts the 19th annual Masters of the Grill.
